The Fresh Med food truck features a bright yellow lemon slice on the outside and bright smiling faces that serve up insanely good food from the inside. Co-owner, Tyler Lee, and Johnson & Wales graduate, Laura Morrow, gave us the skinny on their phat truck (which also happens to be the largest in Charlotte).
The Fresh Med curbside service at local breweries by night can become a full-time catering truck for large events by day. And every made from scratch item that Fresh Med serves is created, right there, in the belly of the beast. Starting with their Fettuccine Alfredo Balls. Fresh fettuccine pasta with creamy Alfredo sauce and bacon are rolled together into a ball, lightly breaded with an Italian bread crumb coating, and deep-fried. Swoon! Topped with more of their homemade lemon Alfredo sauce this dish can easily be shared, but why would you?!
Fresh Med has menu items for all tastes. Vegetarians will love the Falafel Pita with Fresh Med’s signature fried chickpea cakes, topped with lettuce, tomato, and onion and hummus. Drizzled with a powerful lemon-garlic tahini sauce that is all kept under wrap in fresh naan bread.
Do yourself a favor and add a side of Fresh Med’s Fresh Cucumber Salad to your order. The flavors are super fresh and not too acidic. And the vibrant green cucumbers and deep purple onions will just brighten your day.
Two of the more popular items on the Fresh Med food truck are the Spartacus Sandwich and the Mediterranean Lamb BBQ. Both are outstanding. The Spartacus is Fresh Med’s version of a Lamb Philly. The flavorful slow-smoked and shredded leg of lamb is elevated with Fresh Med’s house made barbecue sauce. Add caramelized onions and a gorgeous purple slaw inside a fresh baked Portuguese roll, and you’ve got yourself a winner.
The Spartacus showcases the same slow roasted leg of lamb but sliced this time and grilled with peppers, onions, and mushrooms. Topped with lettuce, tomato, Fresh Med’s homemade garlic aioli and served on naan bread, this sandwich becomes more of an authentic tasting gyro.
If the stronger mediterranean flavors aren’t really your thing, opt for Fresh Med’s Italian Grinder or the Chicken Saltimbocca Sandwich (my favorite). The Chicken Saltimbocca Sandwich comes out looking a little Plain Jane but grabs your taste buds more like Mustang Sally. The marinated juicy chicken is topped with Fresh Med’s signature halloumi and fontina cheese blend. The added prosciutto gives it a slightly salty edge while the fresh sage puts a unique spin on the taste. All of this is served on a swoon-worthy Portuguese roll that is baked fresh daily from, the aptly named bakery, Our Daily Bread.
Truly you can’t go wrong with any pick from the menu. Fresh Med stands up to it’s name and offers a flavorful fusion of fresh ingredients with a mindful mix of the Mediterranean.
